Abstract

A sample of coconut milk was collected through separating the coconut meat from the fluid. Antioxidant activity was determined using a (DPPH) assay. Physicochemical properties was identified using pH meer. The pH level of the coconut milk is 6.8 while the DPPH assay has an RSA value of 24.46% and 23.19%. Based from the results, the researchers concluded that the coconut milk is acidic and that there is a presence of antioxidants activity in the coconut milk. The researchers recommended that more physicochemical properties to observe for its detailed information. The researcher also recommend to do a study applying coconut milk or any component of coconut to a specific substance or specimen to know possible effects of the antioxidant activity.
