Abstract

Chicken meat is one of the staples in Filipino cuisine, widely used in multiple dishes to create a nutritious meal because of its accessibility, affordability, and nutritional value. However, like most raw meat products, chicken is highly susceptible to bacterial contamination due to multiple factors such as improper handling, temperature abuse, moisture, and many more external changes that could possibly cause contamination. The study on the identification of the most common microorganisms in chicken (Gallus gallus domesticus) leg from different public markets in Dasmariñas, Cavite explores the most common microorganisms present in chicken legs from public markets in Dasmariñas City, Cavite, specifically investigating three stalls from 1127 Central Market and Kadiwa Public Market. To ensure accurate identification several methodologies were employed, such as homogenization, serial dilution, aerobic plate count, colony morphology, and VITEK analysis, the final step used to identify the specific microorganism found in the chicken leg samples. Results revealed that Chryseobacterium indologenes is the most prevalent microorganism, indicating possible contamination during handling or storage. Although a relatively uncommon bacteria Chryseobacterium indologenes can pose a significant threat to immunocompromised patients because of its non-fermentative rods that are intrinsically multi-drug resistant which could lead to further complications for vulnerable individuals. These findings highlight the need for stricter sanitary practices and regulatory enforcement in wet  markets to minimize further microbial risks. The findings of the study emphasize the significance of routine monitoring of poultry products in local markets, whether public or private institutions, which is essential for protecting public health and reducing the incidence of potential foodborne illnesses, considering how chicken is a staple for many Filipino households.
