Abstract
The study utilized experimental research design using agar well diffusion assay to determine the inhibitory activity of pediococcus acidilactici against salmonella typhimurium and serial diffusion method to determine the minimum inhibitory concentration. The results of the study showed that the cell free extract of pediococcus acidilactici did not exhibit any zone of inhibition against salmonella typhimurium. However, cell free extract of pH 2 has a higher mean of zone of inhibition produced (12.11mm) that the cell free extract at pH 3 (10.89mm). The determined mean of the minimum inhibitory concentration was 416.67ul/ml and the mean of the minimum bactericidal concentration was 666.67 ul/ml. The study concluded that the antimicrobial activity of pediococcus acidilactici against salmonella typhimurium showed no zone of inhibition with the untreated extract. although, reducing the pH of the cell free extract 2 and 3, showed inhibition. The pH plays a signficant role in the inhibitory activity of the cell free extract of Pediococcus acidilactici.
